I have been experimenting. As with any diet or meal plan you try, you have to go shopping and buy pretty much one of everything! The assortment of unused food becomes overwhelming... It is close to Thanksgiving and I must say that I make THE BEST mashed potatoes and I will miss them very much. So last night I decided to come up with an alternative to the mashed potatoes and I gave the cauliflower puree/mash I've seen posted on here a try. Oh my goodness! I ask myself why didn't I try this sooner? They were delish!I highly recommend them... I added just butter, salt, pepper and a dash of heavy cream. Of course, I couldn't do it without my Ninja! Now I want to try the same recipe and make a broccoli something... maybe a soup. And then, I had some cream cheese leftover and some chicken thighs (usually a yech! for me, but there are SO many leftovers in my fridge). So I added a dollop of cream cheese, a sprinkle of shredded sharp cheddar cheese and diced one small slice of onion and fried it all together with the chicken... The heavens sang.
