Eating meat won't make you gain weight unless you are eating a huge amount in calories. Lean protein such as chicken is one of the best sources to help people lose weight. But there are many other sources if you don't want to eat meat. If you are currently changing the way you have been eating, you have to give your body a few weeks to adjust. Just keep an eye on your caloric intake. Your diet looks amazingly healthy though.
