I cooked up some pork belly, ribeye fat, ribeye's and then began rendering the ribeye fat down. It has been slowly rendering overnight and it smells unbelievably delicious. I only ate fatty meat yesterday. I meant to eat a ribeye but I was so full that I couldn't eat and put them in the fridge.

By 1-2 pm, I am having an issue with energy and thinking clearly. But, this has been an ongoing issue for approximately 4 months or so. I think it is a symptom of my ongoing depression and apnea. But, I am useless by that time. I feel like "The Blob". Hopefully, that will change because there is so much more that I would like to do with my life than sleep in my recliner and watch TV endlessly.

Note: I did experience some mild acid reflux from eating such a fatty meal of pork belly and ribeye fat. So I drank some Apple Cider Vinegar mixed with water and Splenda to make it palatable. I'm not that hard-core...yet. ;))

By 10 p.m., I went to bed. I was so sleepy that I didn't even have time to say my prayers before I fell asleep. I woke up at 2 a.m., feeling bright-eyed. Checked on my ribeye fat in the Dutch oven, just to make sure everything was fine and went back to bed. Said my prayers and instantly fell asleep. I woke at 6:25 a.m. and Boy! was I groggy!!! I would've thought that getting extra sleep would make my feel better. Not so, apparently. Ah well...I guess, it's a work in progress.

I'm just about to get up and get dressed to go walk and get some awesome sunshine. It looks beautiful. I'm excited to have lost 10 lbs.! Woohoo.
