Just got back to work from Dr. appointment. My doctor was overall pleased that with all the upsets in my life the last six months that my weight was still where it is. So I stressed over nothing. He wants to see me again in 6 months. Said to exercise and eat oatmeal. :)- I don't like oatmeal... My cholesterol numbers were moving in the right direction. I went from overall cholesterol about 250 down to 220. Still too high...but much better than where it was. Same with LDL. I was at around 180 previous...now it is 156. Both were a big enough decrease that I don't have to be on cholesterol meds at this time. The BEST news was that my good cholesterol which has always been around 27 (normal 40-60) jumped up to 54! He was very happy about that!!! Good day overall for Kathy!

I don't particularly like oatmeal either, but I try to force myself to eat it as much as I can. It is SOOOOO healthy and good for the body. :) I do steel cut oats and add blueberries or apples or strawberries with some cinnamon. Be careful of the pre-sweetened stuff, there can be a lot of crap and preservatives in it.

RAH for good cholesterol numbers all the way around! Fortunately I DO like oatmeal but don't care for hot breakfasts when the weather is warm. I'll sometimes throw a bit of dry oats into my morning fruit smoothie. If your blender is relatively powerful, you don't even know they're there!

Yo...send me the recipe. I will look it over and see if this picky eater can handle them. Wayne...I told the doctor that I would try to eat it once a week. I did find one premade one with apples in it that tasted somewhat acceptable. I know it was full of bad stuff...but it was oatmeal! I didn't totally gag trying to eat it! I think my Mom had a recipe for an unbaked desert bar that had oats in it. It was like a chocolate granola bar type thing. I could totally eat those every day! This was from before there were granola bars...I am really getting old!

Yay Kathy! (Now I know your first name after all this time)! Is there no flavored oatmeal you like? I found a Quaker Chocolate Chip oatmeal that is out of this world! Wish oatmeal cookies counted! Those would be my second favorite behind CC cookies.... :)

Chocolate chip oatmeal muffins 3C Old fashioned oats 1/2C Brown sugar 2tsp Baking powder 1/2tsp salt 2 egg whites 1 egg 1 1/4C skim milk 3/4 C mashed banana (I use applesauce, and cut back to one cup of milk) 1tsp vanilla 3/4C Chocolate chips 1.Preheat oven to 350°. Lightly mist 18 cups in a muffin tin with cooking spray. 2.Combine the oats, brown sugar, baking powder and salt in a large bowl and stir until thoroughly mixed. 3.In a separate bowl, whisk together the egg whites, egg, mashed banana (or applesauce), milk and vanilla. Add to the dry ingredients and stir until blended together. Mix in chocolate chips. 4.Spoon the oatmeal mixture evenly between the prepared muffin cups. Bake uncovered for 18 to 22 minutes or until oatmeal is lightly browned and a toothpick inserted into the middle comes out clean. This is a very flexible recipe, you can use white sugar in place of brown sugar, add different spices, really whatever you want. I'm thinking about making a pumpkin version using canned pumpkin instead of applesauce and pumpkin pie spice. It's odd having a flourless muffin but they are delicious, in my opinion, and even the hubs liked them.

I don't like oatmeal, but I like oats fine. I buy large rolled oats and mix them with milk cold. I put them in the fridge and allow them to soak so they're more digestible. When you're ready to eat them (I always prep just one serving) I mix in a little cinnamon and a tsp of brown sugar. Oatmeal contains GLA, which the body uses for certain functions. (I don't remember which.) Try them soaked. I also have an oatmeal/berry bake recipe that is really quite nice. PM if you'd like it.

There are a lot of receipes on the web for Overnight Oats. That might be good for people who don't care for hot cereal!

Youre welcome! Just a tip while Im thinking about it.... the muffin mix will seem quite watery, no worries it will firm up. Also these muffins wont rise and be poofy like a flour filled muffin. I check to see if theyre done by gently lifting one with a butter knife. If they hold together and are a tad brown on the bottom theyre done. I hope you guys like them.

Hey Kathy! I've been putting off going to the doctor (moved and haven't found a new GP). Anyways, at my last physical over a year ago the doctor recommended I take Niacin to combat my low good cholesterol levels. What have you done or recommend?

Thanks to all...Yo I may have to try the recipe. Doesn't sound too bad! RLMORATH, I can't make any particular recommendation. I have just been trying to eat better overall. I did change from white bread/buns to whole wheat bread/buns. I eat an awful lot of white meat chicken without the skin. I also have increased my activity level. If I knew I could make lots of money!

to lower chesterol, my doctor suggest fish oil, frozen, as it drops to bottom of stomach to keep from backup fish oil taste, and a daily red rice tablet to help lower those numbers. I think no flush niacin helps also as a supplement.
