I am a biochemist with a PhD in Chemistry/Biochemistry with an emphasis on protein/enzyme structure and function. I will be using this lecture as a way to dig a bit deeper in regard to the details within. I just really enjoyed the concise overview that is lecture provides.

I am currently at Oak Ridge National Laboratory working on a team that is exploring the microbial transformation of mercury into the toxic methylmercury by two recently discovered proteins that are essential to this reaction. I will be looking for more sound science to share more info related to the linked lecture.

Yup, that was a great lecture. It resolidifies my thoughts and opinions on fructose.

Careful now, kids. There is a difference between fructose and high fructose corn syrup. Be careful not to muddy the waters... as industry attempts to do. It's like the difference between creatine and creatinine. Just because words are alike does not make them equal. Which witch is which.

I am no kid....I know the biochemistry to see the argument clearly. Watch the entire piece and you will see this clearly also. Your creatine/creatinine analogy is not valid here. The chemical structure of the carbohydrate fructose is well-known. The key is understanding WHERE the fructose is coming from and how much EXCESS is being added into foods.

It would be a completely different story today if the fructose we all were exposed to were only obtained from natural sources such as fruit instead of the movement in the food industry toward high fructose corn syrup.

The overall take-home message is that "a calorie is not a calorie" because the biochemistry is unique for each type of macronutrient that is metabolized. It just so happens that excessive sucrose or fructose (mainly from high fructose corn syrup) is now being linked to the issue of obesity whereas dietary fat was always 'thought' to be the only culprit.
