My basic pickling liquid is 50/50 (flavored optional) simple syrup + vinegar, ie 25% sugar, 25% water, 50% vinegar. Spices as desired & a little salt. For the simple syrup, I like grenadine syrup when I can find it. Beet stems are great sauteed or as a pesto base too
