it was pretty good for a mish mash meal. I love spinach and hummus anyways but with the cauliflower rice, it was really good.

Look delicious! We have similar lunches - nuggets (I use plant based) over greens. Lately I’ve been air frying a patty and cutting up over steamed spinach with tomatoes, and pickle. Added corn today and a Greek yogurt based chipotle dip.
