My hubby lived in Australia and loves lamb. There’s a distinctive taste to it I don’t care for, but maybe as a burger it would be good. Don’t see it very often in the store. Bon appétit Chef Sk.17!😋👍

SK, thx for asking. It's not you, it's me. Seafood is on the menu. The red meat urges are not as strong now. I'm learning to snack before I cook. It helps a bit. The wine is the temptation, I went dry to quit smoking. All the food you cook, I mentally pair a wine.

Thx gp😊 A few more weeks of chanterelles I think. Starting to get a bit water-logged so looking at soups, duxelles to help with texture. Dry sauteeing can't fix evrything

Thx Shrewd 😊 Many people have been scarred by mutton & fatty lamb but today's product is so much milder. Try rack of lamb (trim some of fat cap) with oregao, rosemay, parsley & mustard. Hard sear on cap side, flip and into a 425F oven until done (8-12min) Rest, carve and serve single or single or double chops. YUM
