Weight is holding steady much to my relief. I've had low calorie days and higher calorie days (not by design, but by life) and this is what I know works for me being in maintenance: you can eat a bit of everything, but you must always watch the portions. It's nice to know that you don't have to say no to any food you enjoy, but being mindful is the key to maintaining your current weight. This is why I stay diligent to log everyday.

I understand that my calorie totals at the end of day can be 100-300 calories over or under the real count, so I try to keep my calories (according to FS) around 1000/day.

I would love to hear what works for everyone else in maintenance.

I give a 200 cal buffer and try to not exceed what FS calcs if I slept 24/7 - averaging it - and have recognized by eating mindful if I eat (over) one day I'm not as hungry the next. Just trying to get my body and mind working together in the right direction.

Hear, hear to the mind & body eating connection! These things take time, but we're all getting there if we stick with it. Maybe one day being mindful wont seem like we're being mindful, but rather just the norm.

Yeah - I figure at this pace I should /could lose a pound a month and would be happy to do so while still enjoying food.

I'm with you. I would rather lose just a single pound a month and learn how to keep that pound off than lose 5 or more and just gain most of that back, because my mind hasn't caught yet.
