I chop onion & mushrooms, add a cupof frozen mixed peppers to a frying pan & cook for about 5 minutes. Meanwhile I beat 3 eggs in a large bowl, add salt pepper & parsley, once the vegetables are cooked I add them to the eggs & mix together. Then I return it to the pan & cook on a low heat until its just about cooked through. I sprinkle it
with 30g of finely grated cheese & pop it under the grill for a couple of mi utes until the cheese has melted. Then I plate it & eat it. Its really tasty & a great way to use up leftovers.

If you use one egg and 2 whites saves on fat but keeps the protein.
