Made Jules Gluten Free cookie mix last night! I need to tweak them, but wow, really good! The cookie mix recommends using Earth Balance shortening, but it has soy and I don't want that in my diet, so at her suggestion on FB, I used coconut oil. Well, halfway through cooking, they looked like little puddles of cookie that ran into one another. HAHA! So next time, I will try with 1/2-2/3 the oil and make smaller cookies. I made the...classic chocolate chip cookies...using Enjoy Life chocolate chips (delicious!) So I had a few of those last night. I didn't even think about trying to figure the calories. Dang it! Next time....
I have only put back 1 of the 9 lbs I lost while sick. YAY! Tonight is Swing This and I'm hoping I can make it through. Still having an issue with getting a deep breath. Doc called in amoxicillin of 500 mg 2x a day (that's a lot!) so I have to be sure and keep my body as alkaline as possible (had my lemon water this morning and should cut back on coffee) and full of probiotics (happy bacteria) like with organic greek yogurt and my fermented sauerkraut! Don't want the antibiotics to kill the good stuff in me if I can help it.
