We took the boat out today. I made up some boiled eggs and sausage cookies for my snacks.
So at 2 I get out my 'cookie' bag. Everyone is like ooh What is that? Give me some.... They have their chips and carby food and sodas. Yet I give them some. Daughter says These are the best cookies. ...lol.
Guys really...they are just my sausage patties cooked thin like cookies....lol

Really simple recipe *smiling with a big grin*. -----------
Ground sausage or make your own sausage --------add in any additional seasons you want ------------1/2 cup shredded cheese optional ------------set oven to 400 ------------mix well and form into 2" round circles flattened ----------------on parchment paper roll out flat with rolling pin ------------------------Place on cookie sheet --------------------Bake 20-25 min depending on desired crispness ----------------For extra crispness heat oil in pan on med high and fry 2 mins per side after baking.

I make my own breakfast sausage so I can control what is in it.. Sometimes pork or chicken or turkey and sometimes all three. So good, quick and easy. Fry till almost done in a little bit of Evoo and freeze. Pull one out, microwave for 1 minute and there you go.
