When I try to eat anything processed after fasting (3+ days) I get really sick. Even cheese is an issue.

Vegetable oils are not food, unless you count the vegetable fruits, such as avocado or olive. Behind my comment is research into how corn, canola, peanut, and other vegetable oils are made, and how they are made to be presentable to the public. If I can find the video again, I'll post it. It showed various stages of corn oil processing, which looked black and disgusting.
The oils I use for cooking on high temperatures are animal fats, such as bacon greese or butter. For lower temperatures, I use sesame, avocado, or coconut oils. Olive oil should not be heated. Find a good olive oil be tasting it plain. It should taste good and NOT burn your throat. Canola oil burns the throat.
